Honey found in ancient tombs has been opened, tasted and found edible after three thousand years. Almost no other food does this. The reason is not that honey contains something that kills bacteria, although it does; the main reason is simpler, and it is about water.

Bacteria and moulds need water in order to grow. Honey is roughly eighty per cent sugar and less than a fifth water, and the sugar holds that water so tightly that a cell landing on the surface cannot draw any of it out. Worse, the sugar pulls water out of the cell itself. The organism dries out on a wet surface, which is why honey has been spread on wounds for as long as there are records of medicine.

Bees produce this state deliberately. Nectar arrives at the hive at about seventy per cent water. The bees pass it from mouth to mouth, adding a substance that splits the sugars, and then fan it with their wings for hours until most of the water has gone. Only then is the cell sealed with wax.

The wax matters as much as the drying. Honey is greedy for water and will take it back from the air if it is left open, and honey that has absorbed enough water will spoil like any other sugar solution. The jars in the tombs were sealed.

So honey does not last because it is somehow beyond decay. It lasts because it is held in a state that living things cannot use, and it stays there only as long as the lid stays on.
